This is the perfect breakfast for the weekend when you have a little more time in the morning to enjoy a delicious omelette with your loved one.
It's very simple and delicious!
What u need:
Eggs (I used three large eggs and it was enough for two ppl)
Half an onion or a couple spring onions
1 chilli (optional)
A splash of milk
A tbs of grated Parmesan
Few fresh basil leaves
Mix everything together and pour it in the hot pan with s little knob of butter
Cook it on low heat, so the onion cook and the eggs don't burn
Now, you can be brave (I was :)) and flip it like pancakes, or just cut it in quarters and flip each one.
Now the fun part, cut the mozzarella and put it on top, lower the heat to medium, and put the lid on.
After 5-6 min, the mozzarella should be melted, sprinkle the basil on top and it's ready!
I had it with baked beans and garlic bread.
